The outlook over Appleby Castle and the Eden Valley is a pastoral treat, and this Victorian sandstone house was put up by someone with an eye for a view. The hotel's newest addition is a luxe garden spa. The 1871 Bistro delivers breezy feel-good dishes in a charming rustic room, while the main restaurant takes a more refined approach to proceedings. There's plenty of regional produce on the menu and the kitchen delivers smart, upscale food. Begin with breast of wood pigeon with caramelised pears and cider sauce, before Solway salmon three ways, or a haunch steak of Lakeland venison, and finish with sticky toffee pudding.
