A great example of a traditional Lake District country-house hotel, whitewashed Rothay Manor stands in attractive landscaped gardens a short walk from bustling Ambleside. A Liverpool shipping merchant built it in 1823 and many Regency features are still much in evidence. Served by efficient and friendly staff, the Cumbria-influenced modern British food at dinner might comprise a starter of king scallops with smoked onion mayonnaise, smoked pancetta, caviar and parsley; followed by fir-infused fillet of Ambleside venison with Brussels sprouts, orange, celeriac and gin purée, and smoked pancetta. Madeira and Earl Grey pannacotta with home-made hobnob crumb and sorbet to finish.
