A top-to-toe makeover has transformed this Victorian Gothic mansion into a stylish boutique bolthole designed to appeal to 21st-century pleasure-seekers. An important part of the package is the restaurant, where the old oak floors have been recycled into tables by a local craftsman. Forest Side's new kitchen sports a full arsenal of modern kit, and it's all in the hands of Kevin Tickle, a local lad who served time at Simon Rogan's L'Enclume, so you can expect imaginative ideas built on the finest local, sometimes foraged, produce, with goodies from the resurrected kitchen garden. The finely-tuned flavours of seaweed broth with clams, marsh herbs and kohlrabi make for a storming opener, followed by an immaculately handled slab of cod served with onion purée, brown shrimp butter and mollusc broth. The sheer quality of the raw materials speaks for itself in a dish showcasing pork two ways: loin and belly, accompanied by cultured pollen yogurt and a birch sap reduction from trees in the hotel's grounds. Next comes a crossover course, blending the sweet and savoury notes of sweet cheese parfait with a sea buckthorn biscuit and coltsfoot, while the finale stars forced Yorkshire rhubarb (poached, sorbet and gel) with burnt butter biscuit and sweet cicely.
