On the southern fringe of the South Downs national park, and once part of an extensive farming estate, Deans Place has been a hotel of one sort or another for the past century. Scarcely can it have been quite such an alluring prospect as it is today, its elegant modern decor making a refreshing backdrop to the Victorian gardens and charming riverside location. The principal dining room is Harcourts, with the full-dress experience of fine table linen and glassware, while weekday lunches are served in the primrose-hued Terrace Room, with its gentle views over the croquet lawn. A distinctive style of updated country cooking is on offer in many formats: grills, seafood, vegetarian, and the principal dinner menu. That last might open with smoked haddock chowder and quail eggs, or scallops with a tempura-battered oyster, and then move to local lamb with olive gnocchi, goats' cheese and romesco sauce, or sea bass with parsnip-vanilla purée, lemon potatoes and bok choy in vermouth cream. Finish with chocolate and bayleaf tart on pistachio anglaise.
