A stone-built village inn at St George on the north Wales coast, about 15 minutes' drive from Llandudno, The Kinmel has an elegant dining room arrayed in crisp linen, gleaming stemware and candlelight, where pigeon breasts and salt-baked parsnip with granola, or mackerel with beetroot variations, pickled mooli, and oyster and cucumber sauce, are among the alluring ways to begin. Roll on with breast and pressed leg of guinea fowl with choucroute in sauce allemande, or perhaps a relatively traditional serving of sea bass in vermouth with sprouting broccoli and puréed celeriac. Dessert could be as straightforward as a regally risen passionfruit soufflé.
