After beginning his career with the Roux brothers, Simon King has gone native in Wales, and 1861 celebrates what the region has to offer, including fine vegetables grown by Kate King's dad. The culinary style applies classic techniques in unmistakably appealing modern combinations. A first course of game terrine and melba toast or duo of seared scallops and pumpkin purée with chicken juices might be followed by seared skirt of beef with wild mushroom coulis, or fillet of brill, poached in red wine. It's worth the wait for the hot desserts, perhaps apple tarte Tatin with stem ginger ice cream.
