An open-pit barbecue in the kitchen of this restaurant delivers impeccably sourced meat and seafood cooked 'dirty' - directly on the hot charcoal - with clear influences from those ol' stateside barbecue-meisters and their racy Tex-Mex flavours. The kitchen sends out the likes of pastrami-spiced chicken thighs and boneless meat on buttermilk purée and a quenelle of tomato and chilli jam, followed by crispy monkfish cheek and bite-sized pieces of spiced fish with garlic mash, mixed beetroots and lemon and thyme yogurt. At dessert stage, blueberry sorbet and chutney are clever foils to cut through the richness of vanilla cheesecake.
