The interior of this 1881-built mansion is stunning; all ornate fireplaces and stained-glass windows, while cuisine is contemporary with a strong Scottish element. Ham hock terrine with red peppers and pineapple chutney is a strident starter, while Marie Rose sauce gains a shot of whisky for crayfish, prawns and langoustines. Prime ingredients are carefully handled, as in rack of local lamb (three- or seven-bone), cooked to pink, served with red wine jus, dauphinoise, spinach and carrot purée, and in well-timed roast fillet of halibut in a parmesan crust with mussels, peas and warm tartare-style sauce. Puddings follow the route of lemon tart with caramel ice cream and Seville orange syrup.
