Calcot & Calcot Spa, TETBURY, GL8 8YJ
Now a stylish and popular free house that's part of Calcot & Calcot Spa this stone farmhouse was originally built by Cistercian monks in the 14th century. The buzzy and comfortable Gumstool Inn has a proper country-pub atmosphere and stocks a good selection of West Country ales such as Butcombe Bitter and Wadworth 6X, as well as Symonds cider. An excellent choice of more than 20 wines is offered by the glass or bottle. The food here is top-notch and there is a pronounced use of local suppliers and seasonal produce. A typical meal might kick off with starters of twice-baked Arbroath smokies and Montgomery Cheddar cheese soufflé; chicken liver parfait with red onion and fig chutney and grilled brioche; or Calcot smoked salmon with beetroot and caper remoulade with horseradish cream. Among the main courses may be found Gressingham duck breast with sautéed potatoes, pak choi, chestnuts and prunes; Gloucestershire sausages with mash, red onion jam and crispy shallots; or roasted salmon fillet with brandade mashed potato and anchovy, caper and herb butter. Another option might be to order something from the fireside grill - perhaps organic Black Angus beefburger with bacon jam, gherkins, mature Cheddar and onion mayonnaise or calves' liver with pancetta, sage, creamy mashed potato and capers. Leave a space for the apple and rhubarb crumble with ice cream or the old-fashioned but comforting treacle tart. In the summer, grab a table on the pretty, flower-filled sun terrace, while indoor winter evenings are warmed with log fires.
