Speldhurst Hill, SPELDHURST, Nr Tunbridge Wells, TN3 0NN
This venerable building has surveyed the heart of the village for at least 800 years. Its gables, pitched roof, cruck frame and immense chimney recall another age; the interior is just as captivating, with huge, head-cracking beams and wizened posts sewing the treasure together. Roaring fires dismiss a winter chill, whilst outdoor areas are pleasing places to sit on lazy summer days after an exploration of the High Weald Area of Outstanding Natural Beauty in which the pub is located. Local beers from Larkins share top billing at the bar. Much of the food prepared here is equally parochial in provenance - Ashdown Forest, the Downs and cheeses from Sussex amongst areas championed. Enjoy a braised pork knuckle with celeriac remoulade starter, then follow with a classic pub dish like salt marsh shepherd's pie; loin of Buckhurst Park roe deer; or pan-fried sea bream with piquillo pepper and roasted tomato cassoulet. Seasonally available produce means the menus vary pleasingly throughout the year.
