In 1746, merchant John Bolton built himself a finely-proportioned house, which today is this popular city pub. Bolton later entered history as a combatant in Liverpool's last recorded duel (he was the victor). The elegance of the interior would make him feel very nostalgic, although he might struggle with the concept of naming beers Boondoggle (Ringwood), Cocker Hoop (Jennings) and GingerBeard (Wychwood). Examples from a monthly-changing menu include six-hour confit of pork belly, celeriac mash, apple purée and purple sprouting broccoli; and guinea fowl ballotine, fondant potato, winter vegetables and red wine jus.
