20-21 Hermitage Road, HITCHIN, SG5 1BT
Once a ballroom and nightclub, this is not your typical town-centre pub. Although original features survive, like the high vaulted ceiling and arched windows, the stage once graced by Sixties pop stars is now a dining area. Also part of the transformation is the open-plan kitchen, from which come harissa-glazed salmon with sweet potato, broccoli, bok choy and cashew nuts; Norfolk mussels with white wine and parsley cream; and wild mushroom, tarragon and truffle risotto. There's a strong selection of local steaks from the grill, and a roast on Sunday. Local brews from Brancaster are complemented by a globe-trotting wine list.
