In a delightful hilltop village topped by an early surviving post-mill, landlords David and Fiona Howden have made a great success of The Pointer which serves as a pub, a restaurant and a butchers. They support Brill's own Vale brewery and XT Brewing in nearby Thame, whose spent grain feeds the livestock on their own organic farm; Longhorn cattle, rare-breed Middle White pigs and Hampshire Down sheep all live happily on this farm. Typical of the sophisticated cooking by head chef Mini Patel are starters of Jerusalem artichoke soup, fresh black truffle and toasted hazelnuts; and Brixham crab, red beetroot, Bramley apple and New Delhi spices. For the main event perhaps, Longhorn sirloin and Jacob's Ladder (short rib), dripping-cooked chips, bone marrow, hen-of-the-woods mushroom, lovage and port sauce; Shetland cod loin, hand-made pasta, palourde clams, grilled spring onion and sea herbs; or for two to share - Pointer Farm suckling pig, creamed Maris Pipers, farm greens and caramelised apple sauce.
