There's an eight-course tasting menu too, bolstering an appealing carte, while excellent ancillaries - including amuse-bouche, pre-dessert and petits fours - all hold form. Expect roasted John Dory perhaps served with white asparagus and ox kidney and wholegrain-mustard jus, or roasted fillet of Scottish hare and pâté of leg accompanied by apple and passionfruit compote and brandy sauce, and to finish, maybe a hot banana soufflé teamed with chocolate ice cream. The hotel's bistro-style restaurant 'Contrast' offers a stylish but less formal alternative.
