Chef Mark Sargeant's highly accomplished, modern haute-European cuisine focuses around top class seasonal ingredients, the fixed-price repertoire of lunch, carte and six-course tasting option dotted with luxury, the cooking fitting perfectly under the Ramsay stable umbrella. There's an intelligent simplicity and integrity that allows main ingredients to shine in clean-flavoured dishes; perhaps braised Pacific halibut served with roasted scallop, caramelised onions and kale, crispy bacon and civet sauce, and maybe a rum-and-raisin chocolate fondant with feuillantine and milk ice cream to close. Save room for all the extra touches (tasters, petits fours), while a galaxy of stars populate the serious wine list.
