Description
Perched in the hills above the pretty village of Betws-y-Coed, this family-run hotel offers stunning views of the Conwy valley. Its unassuming 17th-century façade conceals a chic and sophisticated interior which blends country-house comfort with minimalist modern design in a series of intimate and individual rooms, including a cosy restaurant which seats only a dozen diners at a time. Daughter Kelly and husband Peter serve, while mum Janet (Pitman) conjures up some of the finest cuisine in Wales, intelligently allowing quality local organic produce to speak for itself in accomplished, well presented and executed dishes. The short, fixed-price dinner menu changes daily and features a choice of two dishes at each course, with wine recommendations accompanying mains. Take a loin of Cambrian Hills lamb served with parsnip pomme purée, sautéed red onions, balsamic reduction and roasted hazelnut oil, while at dessert, a panettone bread-and-butter pudding might offer an agony of choice alongside poached fresh fig with Welsh goat's cheese lemon cream and Merlot syrup.
