Description
No visit to Gravetye Manor would be complete without exploring some of the 30 acres of garden created by Victorian William Robinson as the Natural English Garden. Robinson also restored the house, which became a hotel in 1958. The current owners continue the custodianship of house and gardens and the tradition of country-house hospitality with care and affection. The traditional oak-panelled restaurant has a carved white ceiling and winter log fires. Chef Mark Raffan has his culinary roots in classical French cuisine from his time with the Roux brothers, plus a stint as personal chef to the late King Hussein of Jordan. This background and his considerable experience here at Gravetye ensure an interesting and eclectic menu of broadly modern English cuisine delivered with high skill and top-class local ingredients - with fruit and vegetables coming from the hotel's kitchen garden. Typical dishes include roast fillet of West Coast turbot served with braised oxtail, parsnip purée and cockles marinière, or perhaps braised cheek of veal with roasted sweetbreads, a cassoulet of beans with pancetta, braising juices and sage butter. Stunning desserts could feature a hot banana soufflé with pistachio ice cream. The wine list is authoritative and offers an extensive choice, including many French grand crus and other world-famous vintages.
