Description
This really is the stuff of legends; dating back 900 years, Amberley sits in fabulous grounds in the lee of the South Downs. It became a romantic ruin after the Civil War and in 1893 was bought by the Duke of Norfolk who transformed it into a delightful family home, but since 1988 it has been owned by the Cummings who have turned it into today's luxury hotel. From the impressive gatehouse and portcullis to antique rooms with high-vaulted ceilings, massive fireplaces and suits of armour, this place oozes character. The magnificent Queens Room is the principle dining room, with its 12th-century barrel-vaulted ceiling and walls adorned with coats of arms and original paintings, while tables come beautifully appointed. Service is appropriately polished and attentive, while chef James Dugan shows his pedigree and passion via a sophisticated, contemporary approach underpinned by classical roots. The classy cooking is driven by seasonal local produce, with well-conceived dishes dressed to thrill. Take John Dory with roast vine tomatoes, sandwiched creamed potato, tomato risotto and hairy bitter cress, and to finish, perhaps baked spiced fig cake served with a lemon jelly, toasted almond foam and fig ice cream.
