The old Pearl Assurance Building has been transformed into a glamorous, metropolitan destination restaurant. The achingly chic interior includes original marble pillars, while walnut, trails of hand-spun pearls (what else - over a million of them), cream leather chairs, well-spaced tables with expensive settings and a huge wooden wine cave to entertain the eye, too. Staff - including a sommelier - provide attentive, professional service, while the appealing medley of lunch, dinner, tasting option and vegetarian menus all come at fixed prices. The skilful kitchen takes a fresh, modern French approach, delivering exciting combinations with clear flavours driven by high quality produce - sprinkled with luxury - in dishes dressed to thrill. Take a chargrilled cutlet of black pig served with chorizo and lentil salsa, red pepper purée and roast langoustines, or perhaps John Dory with ginger escabèche, crab croquettes and carrot purée, and to finish, maybe a Baileys parfait with profiteroles and an orange and yuzu foam. Peripherals like canapés, amuse-bouche, breads, pre-dessert and petits fours all hit form, too.
