Hard by the city's historic walls, the grand Edwardian edifice built as the headquarters of the North Eastern Railway has been stylishly repurposed as a luxury hotel. Straight-up steaks are sourced from a Yorkshire farm - a 10-oz rib-eye, for example, served with proper chips, Portobello mushrooms, confit tomato and Café de Paris butter. For starters, there's dressed Whitby crab, the rich brown meat leavened by sour apple jelly and sorrel sorbet, and sticking with a fishy theme, main-course stone bass with fennel, langoustines, herbs, buckwheat and bisque. to finish, more local flavour in the shape of Yorkshire ginger parkin dolled up with rhubarb, vanilla parfait and orange.
