Built as the headquarters of the North Eastern Railway (NER) and opening at the turn of the 20th century, this grand Edwardian structure was ripe for conversion to a hotel. It overlooks the historic walls of the city and today offers a host of 21st-century facilities, from a swish spa to smart meeting rooms, plus a couple of dining options. Hudsons is the brasserie-style choice, a grill room that serves up steaks sourced from a Yorkshire farm, with 14oz T-bone, for example, served with hand-cut chips and Portobello mushrooms and confit tomato. There's langoustine cocktail to start, and plenty of alternatives to the steaks including duck leg with sweet potato, or aubergine cannelloni with spiced lentils. Finish with a classy version of apple crumble. The second dining option is the newly opened HQ, a fine-dining restaurant that aims to impress with its contemporary cooking. A tasting menu - plus optional wine flight - delivers handsomely constructed dishes such as rabbit with veal sweetbread and foie gras, turbot with red chicory, samphire and orange.
