The spectacular view over Lake Windermere is timeless, but time does not stand still at the Samling and 2016 has seen exciting developments and the arrival of a new chef. Nick Edgar arrived hot foot from Le Manoir aux Quat' Saisons to a brand new restaurant, kitchen and chef's table in a stunning modern stone and glass extension. The charming old country house is getting a revamp, too, while the 67 acres of grounds includes a kitchen garden to ensure a steady supply of first-rate ingredients for much of the year. What is not home-grown comes from a close-knit community of suppliers listed on the menu. The fixed-price carte and tasting menu (including an imaginative veggie version) offer up creative combinations that reveal true balance on the plate. A first course pan-fried foie gras, for example, comes with pineapple purée and caramelised fruit, plus watercress purée and chorizo - a hugely successful partnership. Next up, loin of venison has perfect poise, with a silky jus enriched with chocolate, or go for sea bass with curried mussels and cauliflower. Everything looks pretty on the plate, not least a richly indulgent dessert of banana and caramel. The wine list is an impressive beast that covers the best of the world's regions.
