This modern hotel is on the edge of Wigan within peaceful countryside. Bennett's Restaurant has a stylishly elegant look but a relaxed atmosphere and brisk young staff dispel any notion of formality. 'Lancashire Classics' puzzlingly includes a multinational main course of prawn tempura in panko breadcrumbs with Caesar salad topped with parmesan and olives, with a mix of the traditional and contemporary found elsewhere. A smoked salmon parcel enclosing mousseline of prawn, cod and salmon, served with lemon crème fraîche, could be followed by accurately seared duck breast with blackberry jus and cabbage sautéed with bacon. Desserts end positively with lemon parfait with lemon cream, or rhubarb and plum syllabub.
