In a pint-sized room centred on an old brick fireplace, the cooking is complex, with much technical skill. The seafood cocktail consists of prawns and brown shrimps, its Marie Rose dressing deep-fried in a breadcrumb coating, with red pepper purée and a gel of preserved lemon, a conceptual triumph. At main course, loin of fine local pork comes with a spring roll of the braised rib, toasted almonds, apricot and bitter coffee jelly, or there could be hot-smoked salmon with chestnut raviolo. Black Forest gâteau comes in for deconstruction too, its warm ganache encased in soft crumb, with freeze-dried sour cherries and smooth buttermilk ice cream boozed with Kirsch.
