Buxted is the full country-house package, a graceful white Palladian mansion rising above immaculately laid gardens, with a pillared portico entrance and deep windows. It was built in the early Georgian era for Thomas Medley, who had made a fortune as a port shipper during Britain's periodic hostilities with France. A striking layout in the dining room features a mix of booth and table seating, with lilac upholstery against a pristine white backdrop. The dynamic kitchen produces an entertaining and carefully composed version of the modern British style. Seared scallops with apple curry sauce, julienned vegetables and crispy leeks opens the way for a main course starring a two-way serving of duck - crisp-skinned breast and a 'cigar' of confit meat - matched with Savoy cabbage with bacon, cream and marjoram, apple and star anise sauce and rich duck jus. A straightforward approach to desserts brings a gentle finale of dark chocolate fondant with mint ice cream, or classic vanilla crème brûlée.
