Buxted is the full country-house package, a graceful white Palladian mansion rising above immaculately laid gardens, with a pillared portico entrance and deep windows. It was built in the early Georgian era for Thomas Medley, who had made a fortune as a port shipper during Britain's periodic hostilities with France. A striking layout in the dining room features a mix of booth and table seating, with lilac upholstery against a pristine white backdrop. Steve Cole arrived at the end of 2013 to take over the pace-setting modern British operation here, and produces an entertaining and carefully composed version of the style. Crispy pork bonbons with pickled apple, rocket and grain mustard might provide a way into main courses such as sea bass with crushed thyme potatoes and glazed fennel in caviar butter, or stuffed rabbit saddle with confit leg, puréed carrot and braised red cabbage in blackberry jus. A gentle finale is offered by the straightforward approach to desserts: expect lemon tart with clotted cream, or vanilla pannacotta with cherry sorbet.
