Buxted Park is a magnificent Palladian mansion in over 300 acres. Its architecture and the grand portico at the entrance are indicators of the sort of lavish interiors to expect, although the dining room has a more cutting-edge look, with rounded booth seating upholstered in purple under a skylight. On-the-ball, smartly dressed staff deliver Neil Davison's individualistic take on modern European cooking. A smoked cheese beignet adds interest to cream of cauliflower soup, an alternative perhaps to pheasant ballottine with glazed figs and tarragon mousse, or a tasting of duck. Seasonality is a prime concern, so samphire might accompany moist, meaty monkfish tail wrapped in Parma ham with well-judged, subtle chive cream sauce. More traditionally, rump of local lamb comes with rosemary jus, fondant potatoes and roast vegetables. Canapés start off proceedings, and a selection of petits fours comes with coffee. Puddings are along the lines of classic lemon tart with flavour-packed raspberry sorbet, or pistachio cake with roasted almond ganache.
