Surrounded by 120 acres of Sussex countryside, Alexander House is a country-house hotel in the modern vein: the grand old mansion blossoming into a luxurious business with classy bedrooms, an indulgent spa, and a couple of appealing dining options. Choose from the contemporary-styled brasserie (see entry for Reflections) and the fine-dining restaurant, AG's Grill. The latter is in the oldest part of the building and makes the most of the opulence and elegance of the space; tables are laid immaculately, dressed in crisp white linen, and the menu combines some confidently up-to-date cooking alongside the choices from the grill. Start with a tortellini, generously filled with butternut squash and parmesan, served with shallot and thyme dressing. From the grill, there's a good range of steaks and fish (choose an accompanying sauce or butter), and from the carte the likes of poached loin of venison comes with pommes mousseline and an excellent bitter chocolate sauce.
