The Victorian section at Pendley (there's also a modern annexe) offers period grandeur in spades, particularly in the Oak Restaurant where oak flooring, lofty ceilings, colourful patterned wallpaper, and swagged-back drapes at vast bay windows make an imposing setting. The cooking is totally 21st century: 'ham, eggs, chips, peas and ketchup' brings those components together in a refined version of the greasy spoon classic. At mains, butter-poached halibut fillet is teamed to good effect with chive mash, caramelised veal sweetbreads, gem lettuce, morels, green beans and a chicken stock lifted with sherry vinegar. Finally, peanut parfait arrives with dark chocolate mousse and caramel sauce.
