You can't get much further away from urban bustle in the mainland British Isles than the northern Highlands, where this Georgian country-house hotel luxuriates in splendid tranquillity below a waterfall on the River Forss, amid 20 acres of woodland. It was once the seat of the Radclyffe family, whose portraits hang in the dining room, many of them dating from before the house itself was built. Views of the gardens and riverside soothe the soul, even as the gentle Scottish country cooking seduces the taste buds. Plenty of pedigree Highland produce is on parade, naturally, with Scrabster scallops to start, in a winning combination with sweet shallot pur?e and parsley and caper dressing, while the main course might see Caithness lamb teamed with root veg dauphinoise and glazed red cabbage, or pan-roasted lemon sole accompanied by crushed potatoes mixed with Scrabster crab. Finish up with locally gathered mixed berries to garnish frozen strawberry mousse and crushed meringue, or with liquid-centred chocolate fondant with salt caramel ice cream and a coulis made from more of those berries.
