The Crab has unique selling points coming out of its ears. It's a restaurant with rooms fashioned out of a large country cottage, the guestrooms furnished in emulation of famous international hotel rooms from Waikiki Beach to Bora Bora, while the dining is a single-minded celebration of the bounty of the sea, as indicated by the seashell-filled nets dangling from the ceilings. The kitchen casts its own net with a vigorous lunge from landlocked Berkshire to the southwest boats of Brixham, Newlyn and Looe, for dishes that mix intelligent design with simplicity. Starters might be seared king scallops with black pudding bonbons and raisin purée, or brill tartare with blood-orange jelly and ginger crème fraîche, before a straightforward main such as tranche of crisp-skinned halibut on the bone with fat chips, crushed peas and béarnaise. If you're here for the namesake dish, Salcombe crab comes thermidored, garlic-buttered, or Thai-style with coconut, lime and coriander. Dessert might be a praline chocolate bar, its accompanying scoop of caramel ice cream wearing a bangle of spun sugar.
