The Crab at Bournemouth

The epitome of a seafront venue, the Crab is part of the white-fronted Park Central Hotel, but functions as a restaurant in its own right, smartly done out in sandy hues against a background of dark wood. An array of fresh fish and shellfish is on the menu, starting with pan-fried scallops with black pudding mash, apple jus and crisp pancetta. For mains, you can't go wrong with a whole crab, thermidored, garlic-buttered, and served with gremolata potatoes, or herb-crusted cod with onion purée, wild mushrooms, Puy lentils and aubergine caviar. Finish with a trio of mango bavarois, vanilla cream and passionfruit sorbet.
