When you're exploring the Yorkshire Dales, schedule a pitstop at this traditional pub with rooms in the pretty village of Aysgarth, whether it's for a pint of locally brewed Black Sheep ale or a meal in the contemporary restaurant overlooking the lovely garden. Start with a well-timed line-caught east coast mackerel fillet with pickled kohlrabi, radish, cucumber and squid ink cracker, following on with a vibrant and well-executed main course of pan-roast venison, potato purée, swede and carrot, turnip, haggis fritter, beetroot, blackberry and heritage potatoes. Finish, perhaps, with forced Yorkshire rhubarb served with Earl Grey crème brûlée, poached rhubarb, rhubarb granita, red vein sorrel and ginger snap biscuit.
