Local food hero Paul Askew has brought thoroughgoing British culinary modernism to Liverpool. Dishes are carefully composed, full of imaginative juxtapositions, and confidently rendered. A fat butter-seared scallop sits regally amid smoked pork loin, caramelised celeriac purée and a slew of golden raisins in Sauternes and garlic vinaigrette. These are just a prelude to properly trimmed red-legged partridge with a mini Cox's apple tart, a parmesaned cabbage parcel and quince paste for a fine autumnal main course. Fish could be a hake fillet robustly supported by morcilla and Brussels sprouts. A well-executed pear and apricot frangipane tart makes a fitting served with white chocolate mascarpone and limoncello syrup.
