You might start with game terrine with fig chutney, black pudding biscotti and apple balsamic, and move on to main courses put together with fine-tuned precision, perhaps a full-bore partnership of Herefordshire beef with an ox cheek pithivier, dauphinoise potatoes, cep marmalade and Madeira jus. Good old rhubarb and custard might get a contemporary makeover, the creamy vanilla custard made with duck eggs and counterpointed by the tang of poached rhubarb and rhubarb sorbet.
