The Georgian hotel is surrounded by trees with sea and castle views, and picture windows in the two restaurants make the most of the vista. Both are in the converted coach house, with the Havelet Grill on the ground floor and the Wellington Boot above. The latter is the main event, and it deals in classical cooking with its feet on the ground. Start with pan-seared scallops with cauliflower and crispy chorizo. Next up, lamb fillet comes with herb and spinach couscous, grilled courgettes and plum sauce, and with the French coast close by, classic apple tarte Tatin provides a suitably Gallic finale.
