This former priory is now a comfortable hotel with a soothing vibe and a restaurant using the peerless fresh produce - fish, seafood, meat, cream and butter - of Guernsey's coasts and meadows. The kitchen looks to the French mainland for inspiration in their repertoire of simply cooked and presented dishes. A simple pairing of pan-fried scallops with black pudding, pancetta and apple sauce gets things off the blocks, followed by a classic combo of roast rack of new-season lamb with shallot, port and rosemary sauce, dauphinoise potatoes, and fine green beans. Caramelised apple tart with a sharp palate-refreshing green apple sorbet brings things to a zingy close.
