Formerly a 19th-century manor house, this comfortable family-run hotel on the outskirts of St Helier has been sensitively refurbished to a high standard. The Montana restaurant is a small but stylish dining room with a slightly formal atmosphere and professional service. Local fish and seafood feature heavily in dishes with good flavour combinations. Pan-fried Jersey scallops, for example, might come with sautéed pak choi and raw scallop dressing, followed by grilled whole Jersey lemon sole with Jersey Royals (but of course), baby vegetables and white wine sauce, while dessert might deliver chestnut layer cake and honeycomb sauce. Roberto's Jazz Bar serves lighter dishes to a background of cool jazz.
