The name is not a reference to a seafaring friar, but rather the building's 16th-century role as a store for the salt the monks' traded at Exeter Cathedral. The Garden Room restaurant makes a smart yet understated backdrop for unpretentious cooking. To begin, Capricorn goats' cheese pannacotta is pointed up with apricot and lentil relish, or there might be braised pork cheek set in its own jelly with home-made piccalilli and melba toast. Main course imaginatively pairs confit duck tartlet with slow-roasted belly pork, champ potatoes and a light porky jus bringing it all together. To finish, a classic lemon tart comes hot from the oven with clotted cream.
