This stone-built house on the east bank of the River Nith is in the perfect location for sourcing top-drawer produce. Salt-cod brandade with French beans in shallot vinaigrette is the powerful, simple opener to a Gourmet Menu that might roll on with a fricassée of mussels, prawns and shrimps with leeks and caviar. Firm classical underpinnings produce a Scotch beef study that combines sautéed fillet, a sticky ragoût and beef terrine with accompanying greens, while salmon comes with roast chicory and crushed new potatoes in chive cream. To finish, lemon posset appears with raspberries, pistachios, honeycomb and meringue, and the selection of impeccable Scottish cheeses is served with home-made oatcakes.
