A Grade II listed Georgian mansion is home to HdV's operation in Tunbridge Wells and the enormous wine lists remain an integral part of the attraction of this hotel chain. The cooking continues on a solid French bistro basis, offering scallops in sauce vièrge, or chicken liver parfait on sourdough toast, to start, then sole meunière with brown shrimps, pedigree 28-day aged rib-eye with skinny chips and textbook béarnaise, or the more obviously Anglo comfort-food likes of 'shepherd's pie' made with duck. Vegetarian mains include parsnip and beetroot Tatin, or spelt risotto with chanterelles. To close, treacle tart is a moistly satisfying rendition, served with clotted-cream ice cream.
