2 rosettes

This period country house in its hugely tranquil location hits the sweet spot between old-school formality and contemporary good taste. You're in safe hands, and you know it. There are 24 acres of grounds to explore, with streams, waterfalls and woods, and plenty of luxurious spaces within. The restaurant makes excellent use of the produce from the region and delivers a refined experience that doesn't feel in the least bit stuffy. The smart modern British cooking might see you start with Perl Las beignets with walnuts and poached pear, or head off further south for pan-seared stuffed baby squid with tomato fondue, chorizo and capers. Main-course Welsh pork belly comes in a fashionable partnership with Caldey Island lobster, while dessert brings forth iced lemon parfait with blackcurrant and mint. If you're staying the night in one of the stylish bedrooms you'll have good cause to dive into the phenomenally good wine list with gusto.
