If the setting in a pretty cottage in the centre of the village suggests a certain homeliness, think again. There may be a charming simplicity to the small dining room - rustic-chic, you might say - but the cooking takes a thoroughly contemporary tack. That is not too say it's all whizz-bang, techie stuff, but rather the new wave of cooking that gets the most of out the ingredients by maximising their natural flavours. There lots of pickling, curing and clever techniques, with an honesty and purity to what turns up on the plate. And it all looks gorgeous. There's a tasting menu and carte to pick from, plus a bargain tasting menu on Tuesday. A dish of home-smoked mackerel with roast celeriac, pickled beets and mustard cream sums up the style to a tee, while another of scallop ceviché shows a canny combination of flavours and textures. Slow-cooked kid is a stellar course, packed with rich, goaty flavour, and served with a sour goats' milk gel. Sweet courses such as beetroot and chocolate cakes with bee pollen, hazelnuts, milk and honey are no less compelling.
