The restaurant at this country-house hotel looks out over Portree Bay to the Cuillin mountains - no wonder it's called 'The View'. A single menu offers creative modern dishes alongside some updated classics, and an excellent showing of regional seafood. A first course terrine of confit chicken is pointed up by an array of pickled vegetables and silky apricot purée, while another purée of blood orange accompanies Barbary duck breast. Portree Bay langoustines, Carbost oysters and Loch Eisort mussels are the very best the local waters have to offer. For traditionalists, there's all the comfort of breaded haddock with tartare sauce and the burger with Orkney cheddar. Finish with a sharp lemon posset with raspberry gel.
