Resembling a farmyard outhouse, The Roost is smart as can be inside, with crisply clad tables and a plethora of pictures and mirrors. Thoroughbred Scottish ingredients include some from the Roost's own kitchen garden and starters of seared Rougié foie gras with hibiscus purée and grape jam, or a salad of pigeon, bacon and boudin noir with artichoke crisps in Marsala dressing, set the scene. At main, there could well be sensitively handled halibut with saffron tagliatelle, brown shrimps, baby fennel and samphire in shellfish sauce, or perhaps loin of red deer with a shallot tart in medlar and juniper jus. Finish with rhubarb vacherin adorned with pistachios.
