This contemporary Black Country Indian goes for a bold colour scheme involving scarlet and black chairs arranged in a chequerboard pattern at darkwood tables. The menu covers tandoori staples and classics (Punjabi saag gosht or chicken tikka masala, for instance) and more refined ideas built on quality, fresh ingredients. Catching the eye among starters is rabbit varuval, a South Indian speciality teaming tender rabbit with onion, curry leaves, mustard seeds and a palate-tingling hit of chilli. The signature dishes show a kitchen that's happy to innovate in the fusion style, with ideas such as pan-fried spiced red mullet with chickpea and spinach gāteau, sauced with cumin and coriander-scented beurre blanc.
