If you're staying overnight you'll find a note in your room listing the staff who you might encounter during the course of your visit. It's a nice touch. There was a time when during a night out there was little chance of meeting anyone other than the front-of-house team, but these days, with all the possibilities for close-up action with the guys and gals in white, you never know who you're going to meet. Make a reservation for the Chef's Table or Kitchen Bench if you want to see them in action, not to mention the whites of their eyes. Sat Bains is just the sort of guy to credit his team, a big-hearted man with an exceptional talent, and the nous to create a restaurant that excels in every department. The former Victorian farmhouse and its outbuildings have been converted with style to create a restaurant with rooms that meets the exacting standards of Sat and Amanda Bains. It is refined and elegant, with bedrooms that would pass muster in any five-star address, and a dining room that is dominated by statement artworks on a grand scale. When it's time to eat, prepare to be met by a menu with colour charts to help guide your way, the idea to reveal the balance of flavours in each dish - sweet, sour, salt, bitter and umami. What is on offer has been prepared with precision and unerring skill, with every taste, texture and temperature put under the microscope (not literally, but almost...), so you are taken to places you don't usually go when seated at a dining table. Choose between the seven- and ten-course tasting menus. Dish descriptions are minimalist, the dishes themselves are anything but; duck egg, peas and mint sounds like a happy partnership, and indeed it is, spectacular even, a vivid green ice cream of tantalising sweetness arriving with a perfectly poached egg and a thin shard of bread. Follow that with a scallop creation which combines seared and raw bivalves, each beautiful specimens, with variations in texture provided by nuts and seeds and cauliflower and vanilla purée, and then a crab 'satay' which is full of surprises and outstanding flavours. There's a 'crossover' dish that arrives after the savoury courses to ease you into desserts such as a seemingly simple construction of chocolate, coffee and olive oil that delivers a perfect chocolate mousse, intense coffee gel and whizzy olive oil jelly. If you feel inspired by your visit, book an early return via a place on the Kitchen Workshop, where you can pick up some tricks of the trade. Gourmet vegetarians should be knocking down the door for their bespoke dishes that have undergone the same vigorous R&D process as the main menu. The exceptional wine list has a colour-coding system all of its own, highlighting acidity, fruit, mineral, oak and non-fruit, with lots of things to drink that you've quite possibly never come across before.
