This extended one-time Georgian hunting lodge has a prime position near the racecourse and enough top-end facilities to satisfy a modern epicure. Start with corn-fed chicken and ham hock with pickled mushrooms, cauliflower purée, caper berries and shallot crisps, or perhaps honey-glazed duck with fondant potato, sprouting broccoli, cherries and almond praline. A busy main course showcasing red mullet comes with fresh herbs and lemon, a crab bonbon, Jerusalem artichoke, beetroot, crayfish velouté and white radish. Finish with a fun 'sweet shop' dessert comprising strawberry and bubble gum pannacotta, banana marshmallow, candyfloss, orange sherbet and macaroons, all exploding with colour, texture and sound effects.
