Wall tiles are reminders that this unprepossessing double-fronted shop was once a butcher's, now a modest restaurant with plain wooden tables and chairs. It's in a village at the end of Thomas Telford's suspension bridge, which seems an unlikely place for a destination restaurant. But booking a table means a long wait, not only due to the limited number of covers and that the place is open for only three evenings a week: word has spread about Stephen Stevens's innovative, often experimental cooking. He offers no choice, or even a menu, although diners are asked about preferences when they book. His cooking is characterised by bold, unconventional combinations in well-presented dishes. Wild mushroom purée is dotted with grains of cereal and golden raisins, and might be followed by celeriac risotto topped with pieces of apple and coffee. A fish course could bring on salted cod with yeasted cauliflower sprinkled with dried ox heart, followed by a main course of a piece of venison, from Snowdonia, with roasted pears, parsnips and smoked yogurt. Eating here involves well-defined, exciting flavours, even when it comes to puddings such as a sphere of bitter chocolate filled with passionfruit, with peanut sauce poured over it, and a final palate-cleanser of lemon posset flavoured with liquorice and mint.
