Matfen Hall, a creation of the Victorian era, within 300 acres of parkland, today offers all modern amenities from spa treatments to golf. The panelled library, replete with shelves of old volumes, does duty as the dining room. The contemporary menus make a neat counterpoint to the surroundings, offering chicken and mussel paella with rabbit tempura and a sautéed prawn to start, then roast sea trout with seafood chowder highlighted by Toulouse sausage and pancetta, or spatchcock chicken with boulangère potatoes, summer vegetables and truffle sauce. Coconut pannacotta with pineapple and strawberry salsa and pineapple jelly makes a fine finish.
