This is an immaculately-preserved Georgian country house where the enthusiastic kitchen team don't cut corners - meat and fish is smoked in-house and everything is made from scratch. In the palatial Lime Tree Restaurant all the detail of the original ornate plasterwork is picked out in gold paint and a crystal chandelier hangs above pristine white linen-clothed tables. Dishes are broadly modern Irish in style - salmon gravadlax with pickled cucumber on a chive cream cheese crostini might be followed a rosemary and garlic chicken supreme with an apricot and sausage stuffing. Finish with an apple and blackberry crumble.
