For a basement bistro venue Greens looks bright and airy, with ornate high-backed chairs in light wood at smartly clothed tables, and deep green carpeting. The cooking is straightforward bistro fare based on pedigree Lancashire produce, including the county's famous cheese, which goes classically into a twice-baked soufflé, served with warm tomato salsa and rocket salad. Ribble sea bass is a treat for main, a thick tranche served with rösti and foraged samphire in saffron sauce. Meat might be lamb shoulder in rosemary-laced juices with a dollop of mashed maris pipers. Finish with apple crumble with rhubarb ripple ice cream when the orchard fruits come on stream.
