In the dining room, a piano, drums and microphone await the next jazz turn. White linen dresses the tables, red banquettes one side, floral-patterned tub seats the other. The dinner menu starts with Duck de Chine: roasted duck with one of five caviars, accompanied by pancake, Thai cucumber, spring onion and duck sauce. Then, respectively, from Commence, First and Second sections: soft-shell crab, coconut, curry leaf and dried red pepper chilli; rice soup, scampi and Australian abalone; and Welsh lamb, air-dried rib-eye beef, Chinese chive, dried shrimp and red chilli. Lunch starts with a dim sum course. Entry level for wines is north of £40.
